  • ¼ cup all-purpose flour – Helps thicken the lemon layer for a smooth texture.
  • 4 large eggs – Contributes to the creamy consistency and structure.

Instructions
 

Step 1: Prepare the Shortbread Crust

  • Preheat the oven to 350°F (175°C).
  • Line a 9x13-inch baking pan with parchment paper or lightly grease it to ensure easy removal after baking.
  • In a large bowl, mix the softened butter, sugar, flour, and salt. Stir until a dough forms—this will be a soft, slightly crumbly texture.
  • Press the dough evenly into the bottom of your prepared pan. Use your fingers or the back of a spoon to press it down to an even layer.
  • Bake for 18-20 minutes, or until the crust turns golden brown at the edges. While the crust bakes, start making the lemon filling!

Step 2: Make the Lemon Filling

  • In a medium bowl, whisk together the sugar, flour, eggs, lemon juice, and lemon zest. Whisk until the mixture is smooth and fully combined.
  • Once your crust is out of the oven, pour the lemon filling over the hot crust. It should spread out evenly.
  • Return the pan to the oven and bake for another 20-25 minutes. The filling should be set and slightly firm in the center when you gently shake the pan.

Step 3: Cool and Serve

  • Allow the lemon bars to cool in the pan at room temperature for about 30 minutes. Then, place them in the fridge for at least 2 hours to help them set properly and make slicing easier.
  • Once cooled and set, dust the bars with powdered sugar for a sweet touch.
  • Cut into squares or bars, and serve them chilled or at room temperature.
